Baja Bean Tacos Recipe

These Baja Bean Tacos are a vegetarian alternative to the traditional Baja fish taco. For a smoky and spicy flavor, the black beans are seasoned with chili powder, cumin, smoked paprika, and garlic powder. The dish is brightened with fresh cilantro and lime juice. For a creamy and tangy finish, top the tacos with avocado, salsa, and sour cream.

Instructions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Sauté the red onion and red bell pepper for 3-4 minutes, or until tender.
  • Combine the black beans, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper in a mixing bowl.
  • Cook for an additional 2-3 minutes, or until the beans are thoroughly heated.
  • Mix in the lime juice and cilantro.
  • Microwave the corn tortillas or heat them in a dry skillet.
