Instructions

  • Preheat the oven to 400 degrees Fahrenheit.
  • Combine the olive oil, oregano, paprika, garlic powder, salt, and black pepper in a small mixing bowl.
  • Brush the fish fillets with the olive oil mixture and place them on a baking sheet.
  • Bake the fish for 10-12 minutes, or until cooked through.
  • Heat a large skillet over medium-high heat while the fish bakes.
  • Cook for 5-7 minutes, or until the corn and bell pepper are tender, in the skillet.
  • Take the skillet off the heat and add the black olives.
  • Toasted tortillas can be warmed in the oven or microwave.
  • Place a few pieces of fish on each tortilla and top with the corn and pepper mixture to make the tacos.
  • Serve right away.
