Instructions

  • Toasted tortillas can be heated in the oven or microwave.
  • Warm the olive oil in a skillet over medium heat.
  • Cook until the corn is lightly browned, about 3-4 minutes.
  • Stir together the black beans and spices in the skillet.
  • Cook for another 2-3 minutes, or until thoroughly heated.
  • Fill each tortilla halfway with the black bean-corn mixture.
  • Garnish with radish and cilantro.
  • Before serving, squeeze a wedge of lime over each taco.
