Mexican Al Pastor Pork Tacos Recipe

Al pastor pork tacos are a popular street food in Mexico, consisting of marinated and grilled pork slices served on tortillas with fresh toppings. This version's marinade includes pineapple juice, which tenderizes the meat and adds a sweet and tangy flavor.

  • Cook Time: 15 minutes
  • Total Time: 35 minutes

Instructions

  • Whisk together the pineapple juice, orange juice, lime juice, white vinegar, garlic, chili powder, oregano, cumin, smoked paprika, salt, and black pepper in a large mixing bowl.
  • Toss the pork in the marinade in a large mixing bowl.
  • Cover and place in the refrigerator for at least 4 hours or overnight.
  • Heat a grill or grill pan on medium-high.
  • Take the pork out of the marinade and discard the excess.
  • Grill for 6-8 minutes per side, or until the pork is cooked through and charred in spots.
  • Place the pork on a cutting board and set aside for 5 minutes.
  • Thinly slice against the grain.
  • Warm the tortillas on the grill for 30 seconds per side before assembling the tacos.
  • Top the tortillas with the pork, chopped pineapple, cilantro, red onion, and cotija cheese.
  • Serve with wedges of lime.
