Grilled Pineapple and Pulled Pork Tacos Recipe

Instructions

  • Preheat the grill to medium-high.
  • Combine cumin, chili powder, smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl.
  • Rub the spice mixture over the pork chunks.
  • Add chicken broth to the pork in a large Dutch oven or heavy pot.
  • Cook, covered, on low heat for 6 to 8 hours, or until pork is tender and easily falls apart with a fork.
  • Take the pork out of the pot and shred it with two forks.
  • In the meantime, toss the pineapple slices with the vegetable oil.
  • Grill pineapple slices for 2–3 minutes on each side, or until grill marks appear.
  • Heat tortillas on the grill or in the microwave before assembling tacos.
  • Add pulled pork, grilled pineapple, cilantro, queso fresco, and red onion to each tortilla.
  • Serve with wedges of lime.
