Carne Asada and Egg Tacos Recipe

These Carne Asada and Egg Tacos are a tasty and filling meal that can be eaten at any time of day. Seared to perfection, marinated flank steak is served with scrambled eggs, diced avocado, and fresh cilantro. These tacos are bursting with flavor and will quickly become a staple in your meal rotation.

Ingredients

  • Prep Time: 30 minutes
  • Cook Time: 10 minutes
  • Total Time: 40 minutes

Instructions

  • Combine the sliced flank steak, olive oil, lime juice, orange juice, minced garlic, seeded and minced jalapeno, chili powder, cumin, smoked paprika, salt, and black pepper in a large resealable plastic bag.
  • Shake the bag until the steak is evenly coated.
  • Marinate for at least 30 minutes and up to 4 hours in the refrigerator.
  • Over high heat, heat a large skillet.
  • Remove the steak from the marinade and discard any excess.
  • Cook for 2-3 minutes per side, or until the steak is browned and cooked to your liking.
  • Allow to cool for 5 minutes before slicing thinly against the grain.
  • In a separate skillet, cook the eggs to your liking while the steak rests.
  • Warm the tortillas for about 10 seconds per side in a dry skillet over medium-high heat, until pliable.
  • Divide the sliced steak and scrambled eggs evenly among the warm tortillas to make the tacos.
  • Garnish with diced avocado and cilantro.
  • With lime wedges on the side, serve.
