This breakfast taco recipe features savory ground beef and a perfectly fried egg wrapped in a warm tortilla. Toppings such as salsa and sour cream can be added as desired.

  • Total Time: 25 minutes

Instructions

  • In a dry skillet, heat the tortillas over medium heat, flipping occasionally, until warmed through, about 1-2 minutes per side.
  • Cook the ground beef in a separate skillet over medium-high heat until browned, about 5-7 minutes, stirring occasionally and breaking up any large pieces.
  • Cook until the onion and bell pepper are softened, about 3-5 minutes.
  • Stir in the chili powder, cumin, salt, and black pepper to the beef mixture.
  • Place the beef mixture on one side of the skillet and the eggs on the other.
  • Fry the eggs until done to your liking, about 2-3 minutes for over easy.
  • Divide the beef and egg mixture evenly among the warmed tortillas.
  • As desired, top with shredded cheese and any additional toppings.
  • Serve the tortillas immediately folded in half.
