Vegetarian Chickpea Tacos Recipe

Instructions

  • Toss the chickpeas with the olive oil, chili powder, cumin, paprika, garlic powder, onion powder, and salt in a medium bowl.
  • Melt butter in a large skillet over medium-high heat.
  • Cook, stirring occasionally, until the seasoned chickpeas are lightly browned and crispy, about 8-10 minutes.
  • Warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side before assembling the tacos.
  • Top the tortillas with the chickpeas, cilantro, avocado, tomatoes, red onion, and queso fresco.
  • Serve with wedges of lime for squeezing over the top.
